About the sourdough starter:
The dried starter comes in a compostable cellophane bag, with instructions and a recipe for rye bread printed on the inside of the packet. The starter is easily brought to life again with warm water and rye flour. Use within a year.

The starter comes from a Russian sourdough that was brought back to England in 1990 by Andrew Whitley, author of Do Sourdough and the founder of Bread Matters. He used this starter to make rye bread again and again in his small bakery in Cumbria, and he's never stopped! This starter is a dehydrated descendent of that original loaf.
